Ruby with garnet hues. Fragrant black cherry, blood plum and mulberry are interwoven with aromas of forest herbs, tomato bush, earthy spices and hints of dark chocolate. An alluring core of dark fruits fills the palate; blackcurrant and boysenberry entwined with wild thyme, black olive, fresh bay leaf and cedar. A crunchy line of acidity and fine, layered tannins provide a long, soft, succulent finish.

BACKGROUND

This wine carries the name of Stephen’s father, fourth-generation Henschke winemaker, Cyril Henschke (1924-1979); a tribute to one of Australia’s outstanding winemaking pioneers, who was renowned for old-vine, single-vineyard and quality varietal table wines. Cyril planted cabernet sauvignon at the Henschke Eden Valley Vineyard in the late 1960s. The cabernet sauvignon vines, along with cabernet franc and merlot, are planted on a north facing slope, managed with organic and biodynamic practices. First produced as a single-vineyard wine in 1978, Cyril Henschke Cabernet Sauvignon celebrates the incredible beauty that emerges from the vibrant rows of the Eden Valley Vineyard, revered for its texture, depth, complexity and fine-grained tannins.

South Australia experienced a record number of heat days in January and the worst bushfire at Eden Valley in living memory. This ended in the wettest February in 44 years with 150mm of rain in 48 hours. A severe black frost in spring and a cold and windy December resulted in minuscule yields. Despite this, the late and long vintage delivered excellent quality fruit.
